Prepare the Rice
Cook the rice according to package instructions and set aside.

Prepare the Broccoli
Steam the broccoli florets until tender but still bright green, about 5 minutes. Set aside.

Prepare the Crawfish Sauce
In a skillet, melt 2 tablespoons of butter over medium heat. Sauté the diced onion and minced garlic until translucent. Add the crawfish tails and cook for 3-4 minutes. Season with Cajun seasoning, salt, and pepper. Remove from heat and set aside.

Prepare the Catfish
In a shallow bowl, mix flour, cornmeal, and Cajun seasoning. In another bowl, combine the beaten egg and milk. Dip each catfish fillet first in the egg mixture, then coat in the flour-cornmeal mixture.

Fry the Catfish
Heat vegetable oil in a large skillet over medium-high heat. Fry the catfish for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Happy Plate
On each plate, create a bed of rice, top with catfish fillets, layer with sautéed shrimp and broccoli, and drizzle with crawfish sauce.
