Prepare the Potatoes
Wash and cut the potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Make the Batter
In a large bowl, combine the flour, cornmeal, baking powder, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Coat the Catfish
Dip each catfish fillet into the buttermilk, allowing excess to drip off, then coat in the batter mixture. Set aside.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the battered catfish fillets into the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Fry the Fries
While the catfish is frying, remove the potatoes from the water, pat dry, and fry them in the same oil until golden and crispy, about 5-7 minutes. Season with paprika and seasoned salt.
