Prepare the Rice
Rinse the basmati rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 2 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Make the Curry
In a large pan, heat 1 tablespoon of oil over medium heat. Add the cubed sweet potatoes and cook for about 5 minutes until they start to soften. Stir in the sliced red bell pepper and green beans, cooking for another 5 minutes.

Add Chickpeas and Season
Add the chickpeas to the pan, along with your choice of curry paste (about 2 tablespoons), and mix well. Pour in 1 cup of coconut milk (optional) and bring to a simmer. Cook for an additional 10 minutes until the sweet potatoes are tender.

Serve
Fluff the basmati rice with a fork and serve the veggie Thai curry over the rice. Enjoy your meal!
