Instructions
- 1
Prepare the Oven and Pans
Preheat your oven to 350°F (175°C). Grease and flour 9-inch round cake pans.
- 2
Make the Cake Batter
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- 3
Bake the Layers
Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- 4
Prepare the Frosting
While the cakes are cooling, you can prepare the frosting. Use your favorite chocolate or vanilla frosting recipe or store-bought frosting.
- 5
Assemble the Cake
Once the cake layers are cooled, place one layer on a serving plate and spread frosting on top. Repeat with remaining layers, stacking them on top of each other and frosting the sides as well.
- 6
Serve
Slice and serve your Smith Island Cake. Enjoy!
