    Prepare the Porcini Garlic Spread

    Soak the dried porcini mushrooms in warm water for about 30 minutes until softened. Drain and chop finely. In a blender or food processor, combine the chopped porcini, garlic, and olive oil. Blend until smooth and season with salt and pepper. Set aside.

    Caramelize the Onions

    Slice the onions thinly. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the onions and a pinch of salt, cooking them slowly for about 20-25 minutes until they are caramelized and golden brown. Stir occasionally to prevent burning.

    Assemble the Flatbreads

    Preheat your oven to 425°F (220°C). Place the flatbreads on a baking sheet. Spread a generous layer of the porcini garlic spread on each flatbread. Top with caramelized onions, then sprinkle gruyere and goat cheese evenly over the top. Finish with fresh thyme leaves.

    Bake

    Bake the flatbreads in the preheated oven for about 10-15 minutes, or until the cheeses are bubbly and golden. Remove from the oven and let cool slightly before slicing.
