Crab Cake
Method
Preparation
- 1
Prepare the Crab Cake Mixture
In a large bowl, gently mix the jumbo lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, lemon juice, and the egg. Season with salt and black pepper to taste. Be careful not to break up the crab meat too much.
- 2
Form the Crab Cakes
Divide the mixture into four equal portions and gently form each portion into a patty, about 1 inch thick.
- 3
Broil the Crab Cakes
Place the crab cakes on a baking sheet lined with parchment paper. Broil in the oven for about 8-10 minutes on each side or until golden brown and cooked through.
- 4
Prepare the Warm Potato Salad
Boil 1 lb of baby potatoes until tender, then slice them and toss with olive oil, vinegar, chopped parsley, salt, and pepper.
- 5
Prepare the Green Beans
Blanch 1 lb of green beans in boiling water until bright green and tender-crisp. Drain and toss with olive oil, salt, and pepper.
- 6
Serve
Plate the crab cake with a side of warm potato salad and green beans. Top with crispy onions for garnish.
