    Prepare the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Seasonings

    Stir in the minced garlic and cook for an additional 2 minutes. Add the fresh thyme, salt, and pepper.

    Deglaze and Simmer

    Pour in the white wine to deglaze the pot, scraping any browned bits from the bottom. Allow it to simmer for about 5 minutes, then add the beef broth and bring to a boil. Reduce heat and let it simmer for 20 minutes.

    Prepare the Bread

    While the soup simmers, preheat your oven to 350°F (175°C). Place the ciabatta slices on a baking sheet and toast them in the oven until golden brown, about 10 minutes.

    Serve the Soup

    Ladle the soup into bowls, place a slice of toasted ciabatta on top of each bowl, and sprinkle generously with the Gruyere cheese.

    Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Serve hot.
