Cook the Rice
In a pot, cook rice according to package instructions. Once cooked, set aside.

Prepare the Chicken
Season chicken breasts with salt and pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for 6-7 minutes on each side, or until fully cooked. Remove from skillet and shred the chicken.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Sauté chopped bell pepper and onion until soft, about 5 minutes. Mix in the shredded chicken and sauté for an additional 2 minutes.

Make the Poblano Tomato Sauce
Blend roasted poblano peppers and tomatoes in a food processor until smooth. Season with salt and pepper to taste.

Assemble the Tacos
Warm the tortillas in a skillet or microwave. On each tortilla, layer rice, sautéed chicken and vegetables, a dollop of poblano tomato sauce, street corn relish, and sprinkle with queso fresco.

Serve the tacos warm with additional lime wedges on the side.
