Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to prepare for baking the cakes.

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust them with cocoa powder, tap out the excess. This will prevent the cakes from sticking.

Making the Cake

  1. 3

    Melt Chocolate and Butter

In a medium saucepan over low heat, combine the dark chocolate and unsalted butter. Stir continuously until melted and smooth. Remove from heat and let it cool slightly.

  2. 4

    Whisk Eggs and Sugar

In a separate mixing bowl, whisk together the granulated sugar, whole eggs, egg yolks, and vanilla extract until the mixture is pale and thick.

  3. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture. Stir until well combined.

  4. 6

    Add Flour and Salt

Sift the all-purpose flour and salt into the chocolate mixture. Gently fold until just combined; do not overmix.

  5. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Baking

  1. 8

    Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes. The edges should be firm but the center should remain soft.

  2. 9

    Cool Slightly

Once baked, let the cakes cool in the ramekins for about 1-2 minutes before inverting them onto serving plates.

Serving

  1. 10

    Serve the Cakes

Dust the tops of the cakes with powdered sugar and serve warm with a scoop of vanilla ice cream on the side.
