Crust Preparation

    Preheat the oven

    Preheat your oven to 350°F (175°C).

    Mix crust ingredients

    In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.

    Form the crust

    Press the mixture into the bottom of a 9-inch springform pan evenly to form the crust.

    Bake the crust

    Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and set aside to cool.

Filling Preparation

    Beat cream cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add sugar and sour cream

    Gradually add the sugar and sour cream to the cream cheese, mixing until well combined.

    Add vanilla and eggs

    Mix in the vanilla extract, then add the eggs one at a time, mixing well after each addition until the mixture is smooth.

    Pour filling into crust

    Pour the cream cheese filling into the prepared crust, smoothing the top with a spatula.

    Bake cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an hour.

    Cool and refrigerate

    Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Topping Preparation

    Prepare strawberries

    In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Toss gently to coat the strawberries.

    Allow the mixture to sit for about 10-15 minutes to let the strawberries release their juices.

    Once the cheesecake has set, remove it from the refrigerator and top it with the strawberry mixture before serving.
