Preparation of Meat

    Prepare the Pork Shoulder

    Start by trimming any excess fat from the pork shoulder. Rinse and pat it dry with paper towels.

    Season the Meat

    Rub the pork shoulder all over with salt and black pepper. Allow it to sit for 10 minutes to absorb the seasoning.

Marinade

    Make the Marinade

    In a bowl, whisk together olive oil, minced garlic, chopped rosemary, chopped thyme, and lemon juice until well combined.

    Marinate the Meat

    Place the pork shoulder in a large resealable bag or a dish. Pour the marinade over the meat, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Cooking the Meat

    Preheat your oven to 300°F (150°C).

    Cook the Pork Shoulder

    Place the marinated pork shoulder in a roasting pan, cover it with aluminum foil, and roast in the preheated oven for about 3 to 4 hours, or until the meat is tender and can be easily pulled apart with a fork.

Dipping Sauce
