Method

Prepare the Base

  1. 1

    Rinse Quinoa

Start by rinsing 1 cup of quinoa under cold water in a fine-mesh strainer. This will help remove any bitterness.

  2. 2

    Cook Quinoa

In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil over high heat.

  3. 3

    Simmer Quinoa

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until all the water is absorbed.

  4. 4

    Fluff Quinoa

Once cooked, remove the saucepan from heat and let it sit, covered, for 5 minutes. Then, fluff the quinoa with a fork.

Prepare the Vegetables

  1. 5

    Chop Vegetables

While the quinoa is cooking, chop the cucumber, bell pepper, cherry tomatoes, and red onion into bite-sized pieces.

Make the Dressing

  1. 6

    Combine Dressing Ingredients

In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of Dijon mustard, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper until well combined.

Combine Ingredients

  1. 7

    Mix Everything Together

In a large mixing bowl, combine the cooked quinoa, chopped vegetables, finely chopped fresh parsley, and fresh mint.

  2. 8

    Add Dressing

Pour the dressing over the salad and toss gently until all ingredients are well coated.

Serve

  1. 9

    Plate and Serve

Taste the salad and adjust seasoning if necessary. Serve chilled or at room temperature.
