Prepare the Meat

Trim excess fat from the pork shoulder and ribs. Pat dry with paper towels.

Make the Spice Rub

In a bowl, combine brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.

Rub the Meat

Generously apply the spice rub all over the pork shoulder and ribs, ensuring they are well-coated. Let them sit for at least 30 minutes to absorb the flavors.

Cooking

Preheat the Grill

Preheat your grill or smoker to 225°F (107°C).

Smoke the Meat

Place the pork shoulder and ribs on the grill. Smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C) for the shoulder and 190°F (88°C) for the ribs.

Prepare the BBQ Sauce

While the meat is smoking, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper in a saucepan. Cook over medium heat until it starts to bubble, then reduce heat and let simmer for 20 minutes.

Glaze the Meat

During the last 30 minutes of cooking, brush the meat generously with the BBQ sauce.

Rest and Serve

Once cooked, remove the meat from the grill and let it rest for 15 minutes. Slice or shred the pork shoulder and ribs. Serve with additional BBQ sauce on the side.
