Prepare the Brisket
Trim excess fat from the brisket, leaving about 1/4 inch of fat for moisture.

Make the Rub
In a small bowl, mix together the kosher salt, black pepper, paprika, garlic powder, onion powder, and brown sugar.

Season the Brisket
Rub the Worcestershire sauce over the brisket, then generously apply the spice rub all over the meat. Wrap the brisket in plastic wrap and refrigerate for at least 4 hours or overnight.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) and soak the wood chips in water for at least 30 minutes.

Smoke the Brisket
Place the brisket in the smoker, fat side up, and add the soaked wood chips. Smoke for approximately 1 hour per pound, or until the internal temperature reaches 195°F (90°C).

Rest and Slice
Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing against the grain.
