Prepare the Casings

If using natural casings, rinse them under cold water and soak them in water for at least 30 minutes. If using synthetic casings, follow the instructions on the package.

Mix the Meat

In a large bowl, combine the ground pork and ground beef. Add minced garlic, salt, black pepper, paprika, crushed red pepper flakes, and dried thyme. Mix well until all ingredients are incorporated.

Add Water

Gradually add the water or ice water to the meat mixture. Mix until the mixture becomes sticky and well combined.

Stuff the Casings

Using a sausage stuffer, carefully fill the casings with the meat mixture, being careful not to overfill. Tie off the ends of the sausages securely.

Place the sausages in the refrigerator for at least 1 hour to allow the flavors to meld.

Grill, pan-fry, or bake the sausages until they are cooked through, about 15-20 minutes, depending on the method used.
