Prepare the Ribs
Remove the membrane from the back of the ribs. Pat them dry with paper towels.
Make the Rub
In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
Season the Ribs
Rub the spice mixture all over the ribs, covering both sides thoroughly.
Marinate
Wrap the ribs in plastic wrap and refrigerate for at least 4 hours, or overnight for best flavor.
Preheat the Smoker
Preheat your smoker to 225°F (107°C).
Smoke the Ribs
Place the ribs in the smoker bone-side down. Smoke for 3 hours.
Add Apple Cider Vinegar
Spray the ribs with apple cider vinegar every hour to keep them moist.
Finish Cooking
After 3 hours, wrap the ribs in aluminum foil and return to the smoker for another 2 hours.
Glaze with Barbecue Sauce
After 2 hours, unwrap the ribs and brush with barbecue sauce. Cook for an additional 30 minutes.
Rest and Serve
Remove the ribs from the smoker and let them rest for 10-15 minutes before slicing and serving.
