Collard Greens

Prepare the Greens

In a large pot, combine the chopped collard greens, ham hock, chicken broth, diced onion, minced garlic, and red pepper flakes. Bring to a boil.

Simmer

Reduce heat and let simmer for about 45 minutes or until the greens are tender. Season with salt and pepper to taste.

Cornbread

Combine Dry Ingredients

In a bowl, mix together the cornmeal, flour, baking powder, salt, and sugar.

Add Wet Ingredients

In another bowl, whisk together the milk, egg, and melted butter. Combine with the dry ingredients until just mixed.

Bake

Pour the batter into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes or until golden brown.

Fried Green Tomatoes

Prepare the Tomatoes

Dip the sliced green tomatoes in buttermilk, then dredge in a mixture of cornmeal, flour, salt, and black pepper.

Fry

Heat oil in a skillet over medium-high heat. Fry the coated tomatoes until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
