Cheese Curds

    Prepare the Milk

    In a medium saucepan, heat the milk over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Add Vinegar

    Remove the saucepan from heat and stir in the white vinegar. Let the mixture sit for about 5 minutes, allowing the curds to form.

    Strain the Curds

    Line a colander with cheesecloth and pour the curdled milk into it. Allow the whey to drain for about 10-15 minutes.

    Season the Curds

    Transfer the curds to a mixing bowl. Add salt and dried herbs if desired. Mix gently to combine.

    Chill

    Cover the curds and refrigerate for at least 1 hour before serving.

    In a mixing bowl, combine the bacon bits, ranch dressing, hot sauce, chopped green onions, and black pepper.
