Prepare the Meat
Trim excess fat from the beef brisket, leaving about 1/4 inch of fat for flavor. Remove the membrane from the pork ribs.

In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper. Mix well.

Generously rub the spice mixture all over the beef brisket and pork ribs. Make sure to cover all sides. Let the meat sit at room temperature for about 30 minutes.

Cook the Meat
Place the beef brisket and pork ribs on the grill or smoker. Add the soaked hickory wood chips to the smoker box or directly on the coals. Close the lid.
