Noodle Preparation

Cook the Rice Noodles
In a large pot of boiling water, cook the rice noodles according to the package instructions until al dente. Drain and rinse under cold water to cool.

Combine Noodles with Dressing
In a large bowl, combine the cooled noodles with sesame oil, soy sauce, and grated ginger. Toss well to coat.
Vegetable Preparation

Prepare Vegetables
While the noodles cool, thinly slice the red bell pepper, shred the red cabbage, and julienne the carrot. Chop the green onions and fresh herbs.

Mix Vegetables with Noodles
Add the sliced red bell pepper, shredded cabbage, julienned carrot, chopped green onions, and herbs to the noodle mixture. Toss to combine.
Spicy Peanut Sauce

Make the Sauce
In a medium bowl, whisk together peanut butter, soy sauce, honey or maple syrup, rice vinegar, Sriracha, and water until smooth.

Combine Sauce with Noodles
Pour the spicy peanut sauce over the noodle and vegetable mixture. Toss well to evenly coat everything.

Transfer the Thai noodle dish to a serving platter and sprinkle chopped peanuts on top. Serve chilled or at room temperature.
