Jalapeños

Method

Preparation

  1. 1

    Prepare the Jalapeños

Preheat your grill to medium heat. Carefully slice each jalapeño in half lengthwise and remove the seeds and membranes using a spoon or a knife to reduce the heat level. Set aside.

  2. 2

    Mix the Filling

In a large mixing bowl, combine the chopped brisket, softened cream cheese, and shredded cheddar cheese. Mix until well combined and creamy.

  3. 3

    Stuff the Jalapeños

Using a spoon, fill each jalapeño half with the brisket and cheese mixture, pressing down slightly to ensure it's packed in.

  4. 4

    Wrap with Bacon

Take a slice of bacon and wrap it around each stuffed jalapeño, securing the ends with a toothpick if necessary. Make sure the bacon covers the filling completely.

Cooking

  1. 5

    Grill the Jalapeños

Place the wrapped jalapeños on the preheated grill. Cook for about 20-25 minutes, turning occasionally, until the bacon is crispy and the filling is heated through.

  2. 6

    Add BBQ Sauce

In the last 5 minutes of grilling, brush the Kansas City BBQ sauce over the jalapeños to glaze them, and continue grilling until the sauce caramelizes slightly.

Serving

  1. 7

    Plate and Serve

Remove the Texas Twinkies from the grill and let them cool for a couple of minutes. Serve warm with additional BBQ sauce on the side for dipping.
