Method

Prepare the Roasted Red Peppers

    Roast the Peppers

    Preheat your oven to 450°F (230°C). Cut the red bell peppers in half, remove seeds and stems, and place them on a baking sheet. Drizzle with olive oil, and season with salt and black pepper. Roast in the oven for about 20-25 minutes or until the skins are charred. Remove from the oven and let cool.

    Peel the Peppers

    Once the peppers are cool enough to handle, peel off the charred skin. Slice the peppers into strips and set aside.

Make the Herb Aioli

    Combine Ingredients

    In a mixing bowl, combine the mayonnaise, fresh parsley, fresh basil, minced garlic, and lemon juice. Mix thoroughly until all ingredients are well incorporated.

    Chill

    Cover the aioli with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Prime Rib

    Season the Roast

    Rub the prime rib roast with salt, black pepper, garlic powder, and smoked paprika. Ensure the seasoning covers all sides of the roast.

    Smoke the Roast

    Preheat your smoker to 225°F (107°C). Place the seasoned prime rib in the smoker and smoke for about 4-5 hours or until the internal temperature reaches your desired doneness (135°F for medium-rare).

    Rest the Roast

    Once cooked, remove the prime rib from the smoker and let it rest for at least 20 minutes before slicing.

Assemble the Sandwich

    Slice the Bread

    Cut the ciabatta rolls in half and lightly toast if desired.

    Layer Ingredients

    On the bottom half of each ciabatta roll, layer a generous amount of mixed greens, followed by slices of smoked prime rib, the roasted red pepper strips, and a dollop of herb aioli.

    Top and Serve

    Place the top half of the ciabatta roll on the sandwich and serve immediately.
