Preparation

    Prep the Vegetables

    Dice the bell peppers and onion into small pieces. Slice the avocado in half, remove the pit, and scoop out the flesh to slice it into thin pieces.

    Cook the Potatoes

    In a skillet over medium heat, add the breakfast potatoes and cook until golden brown and tender, about 10-12 minutes. Season with salt and pepper to taste. Remove from skillet and set aside.

    Cook the Meat

    In the same skillet, add your choice of meat (bacon, sausage, or ham) and cook until fully cooked and crispy, about 5-7 minutes. Remove and set aside.

Cooking

    Sauté Vegetables

    In the same skillet, add a little oil if necessary and sauté the diced bell peppers and onion over medium heat until they are softened, about 5 minutes.

    Add Eggs

    Crack the eggs directly into the skillet with the sautéed vegetables. Stir gently to scramble until the eggs are just set, about 3-4 minutes.

    Melt the Cheese

    Sprinkle the smoked gouda cheese over the scrambled eggs and vegetables. Cover the skillet for a couple of minutes until the cheese is melted.

Assembly

    Assemble the Skillet

    To serve, layer the cooked breakfast potatoes on a plate, spoon the egg and vegetable mixture on top, and add the cooked meat.

    Add Garnishes

    Top with pico de gallo, sliced avocado, and a dollop of sour cream. Serve with slices of toast on the side.
