Prep the Vegetables
Wash and chop the bell pepper, carrot, and zucchini into bite-sized pieces. Slice the green onions thinly, separating the white and green parts.

Sauté the Vegetables
In a large skillet, heat sesame oil over medium-high heat. Add the white parts of the green onions, bell pepper, carrot, and zucchini. Sauté for 5-7 minutes until the vegetables are tender-crisp.

Making Sriracha Mayo

Combine Ingredients
In a small bowl, mix together mayonnaise and sriracha until well combined. Adjust sriracha to taste for desired spiciness.

Fry the Eggs
In a separate non-stick skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.

Serve the Bowl
Divide the noodle and vegetable mixture into serving bowls. Top each bowl with a fried egg, drizzle with sriracha mayo, and garnish with chopped cilantro and the green parts of the green onions.
