Chili Base

Method

Chili Preparation

  1. 1

    Brown the Meats

In a large pot or Dutch oven, over medium heat, add the ground beef and chorizo sausage. Cook until browned, breaking up the meat with a spoon, about 7-10 minutes. Drain excess fat if necessary.

  2. 2

    Sauté Vegetables

Add the diced onion, minced garlic, and diced bell pepper to the pot. Sauté until the vegetables are soft and translucent, about 5 minutes.

  3. 3

    Add the Base Ingredients

Stir in the canned diced tomatoes, kidney beans, black beans, and beef broth. Mix well to combine all ingredients.

  4. 4

    Season the Chili

Add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir until all spices are well distributed.

  5. 5

    Simmer the Chili

Bring the mixture to a boil, then reduce heat to low. Let it simmer uncovered for at least 30 minutes, stirring occasionally to prevent sticking.

Serving Suggestions

  1. 6

    Prepare Toppings

While the chili is simmering, prepare your toppings by chopping green onions and cilantro, and shredding the cheddar cheese.

  2. 7

    Serve

Ladle the chili into bowls and top with a dollop of sour cream, shredded cheddar cheese, chopped green onions, and fresh cilantro as desired.
