Preparation of Ingredients

    Caramelize Onions

    Slice onions thinly. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the onions and a pinch of salt. Cook, stirring frequently, for about 15-20 minutes until onions are golden brown and caramelized. Remove from heat and set aside.

    Prepare Horseradish Mayo

    In a small bowl, combine mayonnaise, prepared horseradish, salt, and black pepper. Mix well and set aside.

    Slice Prime Rib

    Thinly slice the smoked prime rib against the grain, ensuring each slice is about 1/4 inch thick.

Assembly and Cooking

    Toast Ciabatta

    Preheat the oven to 375°F (190°C). Cut ciabatta pieces in half and place them cut-side up on a baking sheet. Toast in the oven for about 5-7 minutes until lightly crispy.

    Assemble Sandwiches

    Spread a generous amount of horseradish mayo on the cut sides of each toasted ciabatta. Layer slices of smoked prime rib, followed by caramelized onions, and top with two slices of American cheese.

    Return the assembled sandwiches to the oven and broil on high for 2-3 minutes, or until the cheese is melted and bubbly.
