    Soak the Beans

    Rinse the dried pinto beans under cold water and remove any debris. In a large bowl, cover the beans with water and allow them to soak overnight (or for at least 8 hours). Drain and rinse the beans again before cooking.

    Cook the Beans

    In a large pot, combine the soaked beans and 6 cups of fresh water. Bring to a boil over high heat, then reduce the heat to low and simmer, covered, for about 1.5 to 2 hours, or until the beans are tender.

    Sauté the Aromatics

    In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until it becomes translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Combine Ingredients

    Once the beans are cooked, drain any excess water if necessary, and add the sautéed onion and garlic to the pot of beans. Stir in the smoked paprika, cumin, chili powder, salt, black pepper, brown sugar, and apple cider vinegar. If using any optional add-ins like bacon, bell pepper, or jalapeño, add them at this stage.

    Simmer the Pit Beans

    Allow the mixture to simmer on low heat for another 20-30 minutes, stirring occasionally, to let all the flavors meld together. Adjust seasoning to taste.
