    Prepare the Potatoes

    Peel and cut the Russet potatoes into equal-sized chunks, about 1-2 inches.

    Boil the Potatoes

    Place the potato chunks in a large pot and cover them with cold water. Add a teaspoon of salt and bring to a boil. Cook for about 15-20 minutes or until the potatoes are tender and easily pierced with a fork.

    Drain and Mash

    Once the potatoes are cooked, drain them in a colander. Return the drained potatoes to the pot. Add the butter, milk, salt, and black pepper. Mash the potatoes using a potato masher until smooth and creamy.

Gravy

    Make the Roux

    In a medium saucepan over medium heat, melt the unsalted butter. Once melted, add the all-purpose flour. Stir continuously for about 2-3 minutes until the mixture is golden brown.

    Add the Broth

    Gradually whisk in the chicken or vegetable broth, ensuring there are no lumps. Continue to stir until the mixture thickens, about 5-7 minutes.

    Season the Gravy

    Stir in the soy sauce, salt, and black pepper. Taste and adjust seasoning as necessary. If the gravy is too thick, you can add more broth to reach your desired consistency.
