Mac and Cheese Filling

    Cook the Pasta

    Boil a large pot of salted water. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, continuing to stir until thickened. Add the cheddar and Monterey Jack cheese, stirring until melted and smooth.

    Combine and Season

    Add the cooked macaroni and diced jalapenos into the cheese sauce. Season with salt and black pepper. Mix well and remove from heat. Let it cool slightly before chilling in the refrigerator for at least 1 hour.

Breading

    Prepare the Breading Station

    Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.

    Form the Bites

    Once the mac and cheese filling is cooled and firm, scoop out small portions and shape them into bite-sized balls.

    Bread the Bites

    Dip each mac and cheese ball first in flour, then in beaten eggs, and finally coat with the breadcrumb mixture. Place on a tray.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Bites

    Carefully drop the breaded mac and cheese bites into the hot oil, in batches if necessary. Fry until golden brown, about 3-4 minutes.

    Drain Excess Oil

    Use a slotted spoon to remove the bites and place them on a paper towel-lined plate to drain any excess oil.

Serving

    Plate and Garnish

    Arrange the fried mac and cheese bites on a serving platter. Sprinkle with chopped parsley and serve with ranch dressing on the side.
