Shortbread Crust

    Prepare the Oven

    Preheat your oven to 350°F (175°C).

    Mix Ingredients

    In a medium bowl, cream together 1 cup of unsalted butter and 1 tablespoon of granulated sugar until smooth.

    Add Dry Ingredients

    Gradually blend in 2 cups of all-purpose flour and 0.5 tsp of salt until the mixture is well combined.

    Press into Pan

    Press the mixture into the bottom of a greased 9x13 inch baking dish.

    Bake the Crust

    Bake in the preheated oven for 18-20 minutes, or until lightly golden.

Lemon Curd

    Whisk Eggs and Sugar

    In a medium bowl, whisk together 3 large eggs and 1 cup of granulated sugar until smooth.

    Add Lemon Juice and Zest

    Stir in 0.5 cup of fresh lemon juice and 1 tablespoon of lemon zest until well combined.

    Cook the Mixture

    In a saucepan over medium heat, melt 0.5 cup of unsalted butter. Once melted, add the egg and sugar mixture, stirring continuously until it thickens. This should take about 10 minutes.

    Strain the Curd

    Remove the curd from heat and strain it through a fine-mesh sieve into a bowl to remove any lumps.

    Pour over Crust

    Once the crust is done baking, pour the lemon curd over the hot crust and spread it evenly.

    Bake Again

    Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the curd is set.

Topping

    Cool and Dust

    Allow the lemon bars to cool completely in the pan. Once cool, dust with 0.5 cup of powdered sugar before cutting into squares.
