Pulled Pork Preparation

Prepare the Pork
Rub the pork shoulder with olive oil. In a small bowl, mix together garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Rub this spice mixture all over the pork.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix in the BBQ sauce until evenly coated.

Assemble the Sandwich
Slice the ciabatta buns in half. On the bottom half of each bun, layer shredded pulled pork, shaved ham, swiss cheese, and pickle fries.

Add Mustard
Drizzle Carolina mustard sauce over the fillings on each sandwich.

Press the Sandwich
Top each sandwich with the other half of the ciabatta bun. Press the sandwiches in a panini press or a skillet with a weight on top for about 5 minutes or until the bread is golden and the cheese is melted.

Serve
Cut the sandwiches in half and serve warm with extra Carolina mustard sauce on the side.
