Preparation of Vegetables
- 1
Prepare the cabbage
Remove the outer leaves of the green and red cabbage. Cut them in half and remove the core. Shred the cabbage halves using a sharp knife or a mandolin slicer until you have 4 cups of green cabbage and 2 cups of red cabbage.
- 2
Grate the carrots
Peel the carrots and then grate them using a box grater or food processor until you have 1 cup of grated carrots.
Making the Dressing

Combine dressing ingredients
In a large mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1 teaspoon of Dijon mustard, 1 teaspoon of celery seed, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper.
- 4
Mix the dressing
Whisk all the ingredients together until smooth and well combined.
Combining and Serving
- 5
Combine vegetables and dressing
Add the shredded green cabbage, red cabbage, and grated carrots to the dressing in the mixing bowl. Stir well to ensure all the vegetables are coated with the dressing.

Chill and serve
Cover the coleslaw with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled as a side dish.
