    Prepare the Collard Greens

    Rinse the collard greens thoroughly under cold water to remove any dirt or grit. Remove the tough stems and chop the leaves into bite-sized pieces.

    Chop the Vegetables

    Peel and chop the onion into small pieces. Mince the garlic cloves.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add the Collard Greens

    Gradually add the chopped collard greens to the pot, stirring to combine with the onion and garlic. Cook for about 5 minutes until the greens begin to wilt.

    Season the Greens

    Add the salt, black pepper, crushed red pepper flakes, and apple cider vinegar to the pot. If using, add the smoked ham hock or bacon at this time.

    Pour in enough water (about 1-2 cups) to cover the greens. Bring to a boil, then reduce heat to low and cover the pot. Let simmer for 30-45 minutes until the collard greens are tender.

    Taste and Adjust Seasoning

    After simmering, taste the greens and adjust seasoning if necessary. Remove the ham hock or bacon if used, and chop into smaller pieces if desired. Return the meat to the pot.
