Fried Chicken Preparation

Prepare the Chicken
Begin by flattening the chicken breasts to ensure even cooking. You can do this by placing them between two pieces of plastic wrap and pounding with a meat mallet.

Bread the Chicken
Dredge each chicken breast in the flour mixture, dip it into the egg mixture, and then coat it again with the flour mixture to create a thick crust.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for about 6-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Bacon
In a separate skillet, cook the bacon strips over medium heat until crispy. Drain on paper towels.

Prepare the Tomato
Slice the large tomato into even slices.

Assemble the Sandwich
On the bottom half of each brioche bun, place a fried chicken breast. Top with a slice of smoked gouda cheese, followed by crispy bacon, lettuce, and tomato slices. Finally, add a generous dollop of spicy bacon mayo, then place the top half of the bun on.
