Cook the Fries
Preheat your oven according to the instructions on the frozen French fries package. Spread the fries evenly on a baking sheet and drizzle with vegetable oil. Toss to coat and bake according to package instructions until crispy and golden brown, about 20-25 minutes.

Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Once melted, add the all-purpose flour and whisk continuously for about 2 minutes to form a roux. Gradually add the milk while whisking to avoid lumps. Cook until the mixture thickens, about 3-5 minutes. Stir in the shredded cheddar cheese, salt, and black pepper until the cheese is fully melted and the sauce is smooth.
Assembling the Dish

Combine and Serve
Once the fries are cooked, remove them from the oven and place them on a serving platter. Top the fries with the shredded brisket, drizzle the cheese sauce over the top, and add dollops of sour cream. Finally, sprinkle chopped green onions on top for garnish. Serve immediately while hot.
