    Prepare the Ingredients

    Dice the bell peppers and onion. Cut the Cajun jalapeño cheddar sausage into slices. Set aside.

    Cook the Breakfast Potatoes

    In a large skillet over medium heat, add a splash of oil and the diced breakfast potatoes. Cook for about 10-15 minutes, stirring occasionally, until golden brown and tender. Season with salt and pepper to taste.

    Cook the Sausage and Vegetables

    Add the sliced Cajun sausage, diced bell peppers, and onion to the skillet with the potatoes. Sprinkle the Cajun seasoning over the mixture. Cook for an additional 5-7 minutes until the sausage is browned and the vegetables are tender.

    Scramble the Eggs

    In a separate bowl, whisk the eggs until well beaten. Pour the eggs over the sausage and vegetable mixture in the skillet. Gently stir until the eggs are fully cooked and scrambled, about 3-4 minutes.

    Sprinkle the shredded pepper jack cheese over the skillet mixture. Cover and let it melt for 2-3 minutes.
