Method

Preparing the Brisket

    Season the Brisket

    Rub the brisket with olive oil, salt, black pepper, and garlic powder. Ensure it is evenly coated.

    Cook the Brisket

    Preheat your grill or smoker to 225°F (107°C). Place the seasoned brisket on the grill and cook for 1.5 to 2 hours per pound, or until it reaches an internal temperature of 195°F (90°C).

    Rest the Brisket

    Once cooked, remove the brisket from the grill and wrap it in foil. Let it rest for at least 30 minutes before slicing.

    Slice the Brisket

    After resting, slice the brisket thinly against the grain.

Sautéing the Vegetables

    Heat the Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Add the sliced onion to the skillet and sauté for about 3-4 minutes until they start to soften.

Assembling the Sandwiches

    Slice the hoagie rolls open lengthwise, being careful not to cut all the way through.

    Fill each hoagie roll with the sliced brisket, sautéed peppers, and onions. Drizzle queso cheese over the top.
