Preheat Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

Cut in Butter
Add the cold unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Milk
Pour in the milk and stir gently until just combined. Be careful not to overmix.

Shape Biscuits
Turn the dough out onto a floured surface and gently knead a few times. Pat the dough into a rectangle about 1 inch thick. Cut out biscuits using a biscuit cutter or a drinking glass.

Bake
Place the biscuits on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes, or until golden brown.
Sausage Gravy

Cook Sausage
In a large skillet over medium heat, crumble the breakfast sausage and cook until browned and cooked through, about 5-7 minutes.

Make Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for an additional 1-2 minutes to form a roux.

Add Milk
Gradually whisk in the milk, stirring constantly until the mixture thickens and comes to a simmer, about 5 minutes.

Season Gravy
Add salt, black pepper, and red pepper flakes to taste. Stir well to combine and allow to simmer for an additional 2-3 minutes.
