Nashville-Style Spicy Sauce

Prepare the Chicken

Marinate the Chicken
In a large bowl, combine buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 2 hours, or overnight for best results.

Prepare the Seasoned Flour
In a separate bowl, mix together flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Coat the Chicken
Remove chicken pieces from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the seasoned flour, ensuring they are well-coated. Shake off any excess flour and set aside.
Fry the Chicken

Heat the Oil
In a large, deep skillet or Dutch oven, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 12-15 minutes, or until golden brown and cooked through, turning occasionally for even cooking.

Once cooked, remove the chicken pieces and place them on a wire rack or paper towels to drain excess oil.
Make the Biscuits

Preheat your oven to 425°F (220°C).

In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

In a bowl, combine cayenne pepper, brown sugar, paprika, garlic powder, onion powder, and salt. Stir in the oil from frying until the mixture is well combined.
