Chicken

Method

Prepare the Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 2 hours, or overnight for best results.

  2. 2

    Prepare the Seasoned Flour

In a separate bowl, mix together flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

  3. 3

    Coat the Chicken

Remove chicken pieces from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the seasoned flour, ensuring they are well-coated. Shake off any excess flour and set aside.

Fry the Chicken

  1. 4

    Heat the Oil

In a large, deep skillet or Dutch oven, heat oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Chicken

Carefully add chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 12-15 minutes, or until golden brown and cooked through, turning occasionally for even cooking.

  3. 6

    Drain the Chicken

Once cooked, remove the chicken pieces and place them on a wire rack or paper towels to drain excess oil.

Make the Biscuits

  1. 7

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 8

    Mix Dry Ingredients

In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.

  3. 9

    Cut in the Butter

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

  4. 10

    Add Buttermilk

Pour in the buttermilk and stir until just combined. Do not overmix.

  5. 11

    Shape the Biscuits

Turn the dough out onto a floured surface and gently knead a few times. Pat the dough into a 1-inch thick circle and cut out biscuits using a round cutter.

  6. 12

    Bake

Place the biscuits on a baking sheet and bake for about 12-15 minutes or until golden brown.

Prepare Nashville-Style Sauce

  1. 13

    Make the Sauce

In a bowl, combine cayenne pepper, brown sugar, paprika, garlic powder, onion powder, and salt. Stir in the oil from frying until the mixture is well combined.

  2. 14

    Coat the Chicken

Once the chicken is fried and drained, brush the Nashville-style sauce generously over each piece.
