Cooking Instructions
- 1
Prepare the Ingredients
Gather all the ingredients and prepare them as listed.
- 2
Sauté the Chicken and Sausage
In a large paella pan or skillet, heat olive oil over medium heat. Add the chicken thighs and Andouille sausage, cooking until the chicken is browned on all sides, about 5-7 minutes. Remove them from the pan and set aside.
- 3
Cook the Vegetables
In the same pan, add the chopped onion, garlic, and red bell pepper. Sauté until softened, about 3-5 minutes.
- 4
Add the Rice and Spices
Stir in the rice, saffron, paprika, salt, and black pepper. Cook for another 2-3 minutes until the rice is lightly toasted.
- 5
Add the Broth
Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and return the chicken and sausage to the pan.
- 6
Add Seafood
After about 10 minutes of simmering, add the shrimp, clams, mussels, and peas. Cover and cook for an additional 10-15 minutes, until the seafood is cooked and the rice has absorbed the liquid.
- 7
Serve
Remove from heat and let it sit for 5 minutes before serving. Garnish with lemon wedges and enjoy!
