Preparation
Prepare the Tomatoes
Slice the green tomatoes into 1/4-inch thick rounds. Sprinkle with salt and let them sit for about 15 minutes to draw out excess moisture.
Make the Tempura Batter
In a bowl, mix together the flour, cornstarch, salt, and black pepper. Gradually add the cold water while whisking until you achieve a smooth batter.
Batter the Tomatoes
Dredge each tomato slice in the tempura batter, ensuring it is fully coated. Allow any excess batter to drip off.
Fry the Tomatoes
Carefully place the battered tomato slices into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes on each side or until golden brown and crispy.
Drain and Serve
Remove the fried tomatoes from the oil and place them on paper towels to drain excess oil. Serve hot with diced Fresno peppers sprinkled on top.
