Frying the Chicken

    Marinate the Chicken

    In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.

    Prepare the Coating

    In another bowl, mix the flour, salt, and cayenne pepper. Take the marinated chicken pieces out of the buttermilk, letting the excess drip off, then dredge them in the flour mixture, shaking off any excess flour.

    Heat the Oil

    In a large, heavy skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chicken

    Carefully add the chicken pieces to the hot oil, working in batches if necessary. Fry for about 12-15 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

    Drain and Serve

    Once cooked, remove the chicken from the oil and drain on a wire rack or paper towels. Serve hot with your choice of waffles or collard greens and Cajun fries.
