Cooking Instructions
- 1
Prepare the Marinade
In a small bowl, mix together smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper.
- 2
Marinate the Chicken
Rub the olive oil all over the chicken halves. Then, generously apply the spice mixture to both sides of the chicken, ensuring it's well coated. Let it marinate for at least 1 hour (or overnight for best results).
- 3
Set Up the Smoker
Preheat your smoker to 250°F (121°C) using your choice of wood chips (hickory or mesquite works well).
- 4
Smoke the Chicken
Place the chicken halves skin-side up in the smoker. Smoke for about 2 to 3 hours or until the internal temperature reaches 165°F (74°C).
- 5
Rest the Chicken
Once cooked, remove the chicken from the smoker and let it rest for 10-15 minutes before carving.
