Hot Honey Brussels Sprouts with Parmesan, Pistachio, Bacon Vinaigrette

Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and slice them in half. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts out on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and tender, stirring halfway through.

Prepare the Hot Honey
Once the Brussels sprouts are roasted, drizzle hot honey over them and toss to coat. Return to the oven for an additional 5 minutes.

Make the Bacon Vinaigrette
In a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and leave the drippings in the skillet. Add red wine vinegar to the skillet and whisk to combine, then add the cooked bacon back to the skillet.

Combine and Serve
In a large serving bowl, combine the roasted Brussels sprouts, grated Parmesan cheese, and chopped pistachios. Drizzle the bacon vinaigrette over the top. Toss gently to combine and serve immediately.
