Prepare the Beans
Rinse the red beans and soak them in water overnight, or at least for 6 hours. Drain and set aside.

Add Garlic and Spices
Stir in minced garlic, thyme, cayenne pepper, bay leaves, salt, and black pepper. Cook for an additional 2 minutes.

Add Smoked Pork and Beans
Add smoked pork and drained red beans to the pot. Pour in the chicken broth and bring to a boil.

Simmer
Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours, or until beans are tender. Stir occasionally and add more broth if needed.

Cook the Rice
While the beans are simmering, cook the rice according to package instructions.

Serve
Once beans are tender, remove bay leaves, adjust seasoning if necessary, and serve the red beans over the cooked rice.
