Method
Preparation
- 1
Make the Graham Cracker Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until set and lightly golden. Allow to cool.
- 2
Prepare the Key Lime Filling
In a mixing bowl, whisk together the egg yolks and sweetened condensed milk until smooth. Gradually add the key lime juice, mixing until well combined. Pour the filling into the cooled graham cracker crust.
- 3
Bake the Pie
Bake the pie in the preheated oven for 15 minutes. Remove and let cool to room temperature, then refrigerate for at least 3 hours or until set.
- 4
Make the Whipped Cream
In a separate bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- 5
Serve
Top the chilled pie with the whipped cream before serving. Optionally, drizzle with berry sauce if desired.
