    Prepare the Ingredients

    Chop the onion, garlic, and bell peppers. Slice the Andouille sausage.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell peppers. Sauté until the vegetables are soft, about 5 minutes.

    Cook Sausage

    Add the sliced Andouille sausage to the pot and cook for another 3-4 minutes until browned.

    Add Chicken and Seasoning

    Stir in the pulled chicken and Cajun seasoning, mixing thoroughly.

    Add Rice and Broth

    Add the jasmine rice and chicken broth to the pot. Stir well and bring to a boil.

    Simmer

    Reduce heat to low, cover, and let simmer for 20 minutes or until the rice is cooked and has absorbed the liquid.

    Add Shrimp

    Once the rice is done, add the shrimp to the pot. Cover and cook for an additional 5 minutes until shrimp are pink and cooked through.

    Season and Serve

    Season with salt and black pepper to taste. Serve hot with slices of French bread.
