Prepare the Cajun Fries
Peel and cut the potatoes into thick fries. Rinse them in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 4-5 minutes. Drain on paper towels and sprinkle with Cajun seasoning.

Make the Beer Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer, stirring until smooth. The batter should be thick enough to coat the back of a spoon.

Cook the Cod
Heat oil in a deep fryer or large pot to 350°F (175°C). Dip each cod fillet into the beer batter, allowing excess to drip off, and carefully place in hot oil. Fry until golden brown and cooked through, about 6-8 minutes. Remove and drain on paper towels.

Prepare the Coastal Slaw
In a large bowl, combine shredded cabbage and carrots. In a separate bowl, mix mayonnaise, lemon juice, and dill pickle relish. Pour the dressing over the cabbage and carrots, tossing to combine. Season with salt and pepper to taste.

Serve
Plate the beer-battered cod with a side of Cajun fries and coastal slaw. Serve with tartar sauce on the side.
