Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide.

Dry the Potatoes
After soaking, drain the water and pat the potatoes dry with a clean towel.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add a handful of the dried potato strips to the hot oil. Fry until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

While the fries are still hot, sprinkle them with Cajun seasoning, salt, black pepper, garlic powder, paprika, and onion powder. Toss to coat evenly.
