Cooking Instructions

  1. 1

    Prepare the Ingredients

Clean the clams thoroughly under running water. Dice the salted pork, onion, celery, and potatoes.

  2. 2

    Cook the Salted Pork

In a large pot, melt the butter over medium heat. Add the diced salted pork and cook until browned.

  3. 3

    Sauté Vegetables

Add the diced onion and celery to the pot, cooking until softened, about 5 minutes.

  4. 4

    Add Potatoes and Clams

Stir in the diced potatoes, clams, thyme, and bay leaf. Pour in enough water to just cover the ingredients. Bring to a boil.

  5. 5

    Simmer the Chowder

Reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.

  6. 6

    Add Cream and Season

Stir in the heavy cream, and season with salt and pepper to taste. Remove the bay leaf before serving.

  7. 7

    Serve

Ladle the chowder into bowls and top with common crackers.
